Apple Cake with Streusel Topping

Ingredients

Cake

  • 2 Cups Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • 1/2 Cup Milk
  • 2/3 Cup Yogurt
  • 1/3 Cup Vegetable Oil
  • 1 Cup White Sugar
  • 2 Eggs
  • 2 Medium Apples, Peeled, Cored and Diced
  • 1 Tsp Vanilla

Streusel Topping

  • 1/8 Cup Butter, or 30 Grams
  • 1/2 Cup Flour
  • 1/2 Cup White Sugar

Directions

  1. Preheat Oven to 160 C/325 F (Fan)
  2. CombineĀ Flour, Baking Powder, and Cinnamon in a bowl
  3. In a separate Large bowl, Beat Milk, Yogurt, Oil, Sugar and Eggs
  4. Gently stir the dry ingredients into the wet ingredients – careful not to overmix
  5. Pour batter into 9″ springform pan
  6. Toss Apples with Vanilla and sprinkle on top of Batter
  7. Prepare the Streusel. Mix softened Butter, Flour and Sugar until crumbly and scatter over apples
  8. Bake in preheated oven for 40 minutes or until toothpick inserted in center comes out clean
  9. Let rest for 5-10 minutes before slicing
